Tahchin Morgh is one of the most iconic dishes in Persian cuisine.

Tahchin: In Persian: ته چین

Also spelled as Tah- Chin is an Iranian rice cake primarily consisting of rice, Yogurt, saffron, and eggs.

Persian Savory Saffron Cake - Tahchin is a very delicious traditional Persian Rice dish full of saffron and other great flavors.

Usually served with chicken, this Tahchin recipe is surprisingly easy to Make!

If you're familiar with Persian recipes, you know that rice is a key element of This beautiful cuisine.

From classic Persian rice and Tahdig to Sabzi Polo (herb rice) and tomato Rice, this humble grain is cooked in different ways that result in different flavors.

Today, I'm showing you one of my favorite rice recipes called Tahchin Morg Aka Persian savory saffron rice cake with chicken.

Ingredients for cooking the chicken:

1 Chicken breast
1 Teaspoon salt or to taste
¾ of a teaspoon of black pepper
2 Large onion cut in quarters
3 Large garlic cloves sliced lengthwise
1 Teaspoon turmeric powder
Enough water to cover the chicken

Ingredients to make the rice:

2 Cups basmati rice (Wash the rice first to remove the starch and the water comes out clear)

¼ cup salt to boil the rice

Ingredients to Bloom the Saffron:

1 Teaspoon saffron threads
A pinch of salt to be used to grind the saffron
2 Tablespoons of boiling water

Ingredients to make the yogurt mixture: This is what binds everything Together

1 Cup plain all fat yogurt (Not Greek yogurt)
½ Cup of neutral oil (Am using sunflower oil)
3 Large egg yolks
2 Teaspoons of salt
Add the saffron water we made before

Ingredients to Sauté the fruits: Cook over low heat so they don’t burn (About 1 minute)

1 Tablespoon butter
½ Cup dried Barberry fruit (You can substitute for dried tart cherries)
¼ Cup raisins (Roughly chopped) Used to sweeten the Barberries
A Splash of rosewater
You need a Clear glass Pyrex size: 3 ½ Liters (29x23cm)
Oil the inside of the Pyrex with sunflower oil
Aluminum foil

Bake at 400F / 200 Celsius

Bake anywhere from 1 hour to 1 ½ hours OR MORE!!

YOU HAVE TO BAKE UNTIL YOU SEE THE CRUST IS GOLDEN COLOR ON THE BOTTOM OF THE PYREX
AND ALL AROUND THE WALLS OF THE PYREX.

*Note*

Cool for 10 minutes before demolding

Decorate the top with the leftover barberries and raisins.
