Hello everyone! Today we're going to show you how to make a brilliant, lovely and classic English dessert : Victoria Sponge Cake. (Victoria Sandwich, Sandwich Cake)

Named after Queen Victoria, this British bake is amazingly delicious. In England, Victoria cake is a traditional dessert, usually served at teatime. And it’s also a perfect idea for summer time, it's an ideal dessert for picnic time and strawberry time.

It is so easy to make, there’s couple of different ways to make it. For a traditional British taste, we follow Mary Berry’s recipe but with a little tweak. Like we cream the sugar and butter together then add the ingredients after that. And it tastes so good and really light. This is a perfect spring and summer baked, a Must-Try classic cake. Victoria Sponge Cake Recipe
📍 Pan Size: diameter 15cm, round mold
📍 Yields: 6

✎ Ingredients
unsalted butter 112g, softened
sugar 112g
cake flour 112g
baking powder 4g
egg 2, about 112g
strawberry jam Q.S.
* plus powdered sugar for garnish
* fresh strawberries 5~6,
* whipped cream Q.S (whipping cream 200g, powdered sugar 20g)

✎ Instructions
1. Butter a pan and place baking parchment on the bottom.
2. Weigh the mixing box.
3. Sift the flour and baking powder and mix well.
4. Crack the eggs into a bowl and beat with a whisk or a fork. Set aside.
5. Put the butter in a mixing bowl, add the sugar and beat with an electric mixer on medium speed for a few minutes or until fluffy and pale.
6. Add the eggs and sift the flour again from height.
7. Mix on low speed, then use a spatula to fold the batter until all is combined, but not over-folded.
8. Weigh the bowl again, minus the weight of the mixing bowl is the net weight of the batter, which is about 440 grams, we are going to make two cakes and divide the batter into two equal parts.
9. Pour the batter into the pan and smooth the surface. If you have two pans, you can bake them at the same time. Otherwise, you need to bake twice.
10. Preheat the oven to 185C and bake for 22-24 minutes or until golden brown.
11. When done, the cake will shrink from the sides. Invert the cake onto a rack and cool completely.
12. When the cakes are cool, pour one cake onto a plate, spread jam, put some whipped cream, then place another cake, sprinkle with powdered sugar, and also decorate with some fresh strawberries and whipped cream if needed.
