When it comes to food exploration, Nepalese cuisines are yet to be widely studied. There are a lot of delicious delicacies that are still bound within the community. The Newari Cuisines are said to be the Best of Nepali Delicacies. Til Alu Ko Achar is also a Newari Dish.

Although, Potato entered our region in the 18th century, it quickly dominated the vegetable choice of the region and became a household essential. The Portugese introduced Potato in India.

The variety of preparations using Potato as the main ingredient is still uncountable. And it is still the most prefered vegetable in the himalayan belt. Through India, Potato entered Nepal, and its charm took over the Nepalese kitchen as well. Among a lot other Nepali Potato Delicacies, Til Alu Ko Achar is one of the best.

To speak of Sesame seeds, it come in three to four varieties. Asia was the hub of Black Sesame for over 3000 years. White Sesame originates from East Indies, lately it enetered India & Nepal and took over the kitchen. The nutty flavourful Sesame is a part of many traditional dishes in India as well as Nepal. Mostly before White Sesame these delicacies were prepared using black sesame.

Benefits of Black Sesame Seeds:

Sesame seeds have a lot of health benefits. Black sesame seeds are rich source of macrominerals and trace minerals, our body requires a large number of macrominerals. The intake of Macro Minerals like Calcium and Magnasium, which constitutes a large sum in Black Sesame seeds is beneficial for Heart Disorders & High Blood Pressure. Black Sesame also contains Iron, Copper, and Menganese which regulates our metabolism, cell functioning, and immune system. It also improves Oxygen circulations throughout our body. Sesame seeds are composed of a good source of healthy Monosaturated and Polyunsaturated fats.
The Til Alu Ko Achar is a side dish or a condiment or a chutney, it origins in Nepal and it is a traditional recipe of the Newar or the Pradhan Community. Til Alu Ko Achar is a mandatory side dish in all their special occassions or Tihar.

The Recipe of Til Alu Ko Achar:

The Ingredients:

Boiled Potato (Large): 3 Nos.
Black Sesame Seeds: 3-4 Tbsp
Onion: 1-2 pcs
Timur or Scezwan Pepper Corn: 5 grains
Lemon: 1 pc or 2 Tbsp of Lemon Juice
Black Salt: As Per Taste
Turmeric: ½ Tsp
Green Chilli/Dalle Khorshani: 4/5 as per taste.
Mustard Oil: 2 Tbsp
Methi/Fenugreek Seeds: ½ Tsp
Corriander Leaves for garnishing.

Preparation:

Cut the boiled Potatoes in smaller cubes. Thinly slice the Onion. Crush the Schezwan Pepper Corn into a coarse powder.

In a mixing bown take the potatoes, onions. Add Schezwan Pepper corn, Black Salt, Lemon Juice to the mixing bown and stir to mix the content.

Dry roast the Black Sesame Seeds until they crackle and grind it into a coarse powder. Add the Black Sesame Powder to the mixing bown and stir to mix properly so that the potato cubes get a good coating of Sesame Powder.

Now for tempering, Heat the tampering pan and add Mustard Oil. Add Fenugreek Seeds while the oil is cold to prevent the fenugreek seeds from getting burned. When Oil starts boiling add turmeric powder and gradually add Slitted Chillies. When Chillies are cooked pour the tadka over the contents of the mixing bowl. You Til Alu Ko Achar is ready.
