Iranian-born chef and best-selling author Sabrina Ghayour shows us how to make this indulgent alternative brunch, using store cupboard spices such as oregano, cumin and pul biber.

Sabrina serves hers with bacon, a boiled egg, greek yoghurt and melted butter infused with Pul Biber but you could easily skip the bacon to make this dish vegetarian. The dish is garnished with dukkah, described by Sabrina as ‘the savoury granola’ for extra flavour and crunch. The recipe serves one for a little weekend treat but you could always scale up to serve 2 or more. Too good to save just for brunch, this dish would make a great midweek dinner or lunch too!

Ingredients:
1 small sweet potato, about 200g, coarsely grated
2 salad onions, thinly sliced
1 tsp cumin seeds
1 tsp Cooks’ Ingredients Wild Oregano
1 ½  tsp Cooks’ Ingredients Pul Biber
1 tbsp plain flour
1 British Blacktail Free Range Medium Egg
150g natural Greek yogurt
15g butter
½ tsp Cooks’ Ingredients Dukkah
2 rashers smoked streaky bacon
Rapeseed or light olive oil, for shallow frying
