ingredients for 15cm cake
Use high moose frame, height 8cm

✔Sponge (Genoise) 18cm
220 g eggs
140g cake flour
135g caster sugar
1g salt
10g honey
30g unsalted butter
30g milk

✔ Diplomat Cream
64-65g egg yolk
70g caster sugar
pinch of salt
250g milk
50g heavy cream
25g corn starch
32g unsalted butter
2g gelatin (one sheet)
1 Vanilla stick

250g heavy cream
20g caster sugar (when whipping cream)

➡ Gelatin was added to make the cream more firm. You can omit the gelatin, but be careful not to knead it too much when loosening the custard cream.

✔ Syrup
42 g of water
30g sugar
3g Kirish Liqueur

➡How to make syrup easily
After 1 minute in the microwave, melt the sugar, heat it for 20 seconds, then cool it.
