Shoulder of Venison.In this in depth Venison video, i show you how to process the shoulders a little different, so you get a higher yield, and more usable cuts. Instead of the standard dice and slice, i break it down into Shoulder roasts, 4 rib rack roasts, steaks, diced venison and trim for sausage, meat balls or ground meat.
This would work really well on the bigger species, like whitetail or reds, you will be amazed how you can transform the shoulders into these lovely, kitchen friendly cuts..
