Sourdough focaccia | No knead, crisp crust and chewy interior

✏️Ingredients
Sourdough 75g
Strength flour 300g
Water 240ml
Olive oil 12ml
Fine salt 6g

✏️ Recipe
Prepare sourdough:Mix 25 g of sourdough starter + 25 g of water + 25 g of Strength flour
About 6 hours later, prepare the main dough.
Allow the dough to ferment for 30 minutes, and then perform the first stretch and fold.
Allow the dough to ferment for another 30 minutes and stretch and fold a second time.
Allow the dough to ferment at room temperature for three hours, then do a final stretch and fold.
The next day
Let the dough rest at room temperature for three hours.
Bake it at 230 degrees for 20-25 minutes.
