Capers are the flower buds of the caper shrub native to the entire Mediterranean region. They are pickled in salt or oil and fermented for several months. In northern European cuisine, capers are rarely used, but in the Mediterranean they are practically everywhere. They are considered a delicious antipasti because they stimulate the appetite. Caper leaves pickled in oil or vinegar are served with dessert wine and cheese. The best-known caper recipes are spaghetti alla puttanesca, vitello tonnato, tartar sauce or Königsberger Klopse. With their pungent aroma, capers give fish, salads, soups and vegetable stews that certain something.
