Hi friends I m here with a simple recipe. What would you do with left over idlis which no one may like to eat ???, I have a nice idea and this recipe is all about that. Here I used the millets Idli prepared from Samai / Little Millet for preparation of Idli fry, however normal idlis can also be used.
Coming to health benefits of millets, they are a group of highly variable small-seeded grasses, widely grown around the world as cereal crops/ grains. Millets are very high in their nutrition content. They are three to five times nutritionally superior to rice and wheat in terms of proteins, minerals and vitamins. Millets are rich in B vitamins, calcium, iron, potassium, magnesium, zinc, also gluten-free and has low-GI (Glycemic index) thus millets are suitable for diabetic people.

The ratio for preparation of Samai Idli is (2 cup millet + 1 cup urad dal) or (1 cup idli rice + 1 cup samai + 1 cup urad dal)
