Greetings!  I was rooting around in my deep freeze and found a beautiful bone in ham.  To my surprise it was 4 years old!  I made plans to cook it for dinner.  I then took all the good meat off the bone and planned on making some ham stock so I could can some split pea soup.  

Stock is super easy to make and all you need is a little time.  You can just rough chop all your veggies and you don't even have to peel them!  Just throw them in the pot and simmer slowly until the veggies are soft and the meat is falling off that bone.  You want to cook all the goodness out of the bone and the veggies not just for flavor but for nutrition.  have you seen the color of the broth and stock you purchase in the store?  It is very anemic if you ask me.  I would venture to guess that it is a bit void of some nutrition as well.

In any case.  when you make stock the most important thing to remember is to slowly simmer, not to have it at a hard boil.  A slow simmer will give you a clear beautiful stock.  If you boil the stock hard, you will get a cloudy stock because the flavors and the nutrients will have been extracted too quickly.
