Hi friends, presenting you Gujarati Methi Baingan Sabzi by Chef Poonam Panchal. This Sabzi features small leaves of Methi which are finely chopped and cooked with Surti Baingan. The blend of masalas with a punch of Methi and Baingan tastes best when combined with Wheat or Jowar roti and Green Chilli Pickle (Link to the video given below). Do try it at home 😊

Methi Baingan Sabzi Recipe -

Ingredients -
150 grams Methi Bhaji finely chopped (Roots chopped and leaves washed with water for any mud remaining)
3 tblsps Oil
1/4 tsp Asafoetida (Hing)
2 tsps Green Chilli Paste
1 1/2 tsps Garlic Paste
1 1/2 tsps Ginger Paste
1/2 tsp Turmeric Powder (Haldi Powder)
1 tblsp Coriander Seeds Powder (Dhaniya Powder)
1/2 tsp Cumin Seeds Powder (Jeera Powder)
250 grams Surti Baingan (chopped)
1 1/2 tsps Salt (or as per taste)
1/2 cup Water
1 big Tomato chopped
1 tsp Sugar (optional)
2 tblsps Coriander Leaves

Serve hot with Bajri or Jowar or Wheat Roti
