Today I tried to make chestnut cheesecake.
It is full of chestnut flavor and good texture, so it has a very special taste :)
Please read the instructions carefully and try it!


Ingredients for Chestnut paste
500g peeled chestnuts
170g muscovado light or brown sugar
pinch of salt
3-4g vanilla paste

If you reduce the amount of sugar in the chestnut paste further, it will be difficult to store for a long time

Ingredients Cheese cake for 15cm
320g cream cheese
50g whole egg
18 g yolks
30g Caster sugar
30g brown sugar
160g chestnut paste
140g whipped cream
7g gold rum
10g Corn Starch
14 MARRONS GLACÉS (Candied chestnuts)

160g whipped cream
15 g Caster sugar
2 Candied chestnuts topping
Lotus Biscuit (optional)

➡The amount of sugar may vary depending on the chestnut paste used and the sugar content of the chestnut. I made my own paste and used commercial candied chestnuts.
➡Bake by Smeg analog oven at 356°F for 40 minutes. Baking temperature and time may vary depending on the oven.
➡Cheesecake is best to have after one day of refrigeration. Can be refrigerated for up to 4 days
