Peanut - 1 Cup

For Tempering

Method:

1. Dry roast the peanuts on a medium low flame until they are fully browned.
2. Cool them down completely, remove their skin and keep them aside.
3. Take oil in a pan and heat it. Add chopped onions, garlic cloves and red chillies.
4. Saute for a few seconds and add tamarind bits. Cook until the onions are transparent and no more raw.
5. Once the cooking process is done, cool down the ingredients and transfer them to a mixer jar
6. To these, add the roasted peanuts, rock salt and grind into a fine powder.
7. Then add some water and grind it all to a nice chutney.
8. For the tempering, heat oil in a tempering pan.
9. Add urad dal, mustard seeds and cumin seeds.
10. Once the mustard seeds start splattering, add red chillies, asafoetida and curry leaves. Saute.
11. Transfer the prepared tempering to the chutney and mix well.
12. Yummy and irresistible Peanut chutney is ready to be served with some hot idlies or dosas by the side.

Peanut/ Groundnut chutney is one of the favorites for so many people. So here's an easy and simple peanut chutney recipe which can be made with peanuts and onions instead of coconut. The advantage in this recipe is that you can store it in the refrigerator and eat the chutney whenever you want for 2-3 days because we are not using coconut and it doesn't go bad easily. This is very similar to peanut butter but with all the Indian Spices and condiments. Another tip for you guys is - never grind your chutney too smooth, it should be a bit coarse. Only then can you enjoy the texture. So try this recipe and enjoy it with your favorite tiffins.
