クソ暑い夏はこいつでキメたい【冷やし山椒そば】

Ingredients] (1 to 2 servings)
100g soba (buckwheat noodles)
100g ground pork
20 g Chinese pickles
1 shiitake mushroom
1 piece ginger
1 clove garlic
1 small amount of green onion
1 teaspoon sugar
1 tablespoon sake
1 tablespoon soy sauce
1 tablespoon mirin (sweet cooking rice wine)
Sansho (Japanese pepper), hot sauce

Soy sauce
1 tablespoon men-tsuyu 3 times
2 tablespoons water
1/2 tbsp ponzu soy sauce
1/2 teaspoon sugar

Recipe] (1) Chop shiitake mushrooms and Chinese pickles.
1) Chop shiitake mushrooms and Chinese pickles. Finely chop garlic and ginger. Chop all-purpose green onion as much as you like.

(2) Heat oil in a frying pan and add garlic and ginger when the oil is cold. Fry over low heat so that it does not burn, and when it becomes fragrant, add minced meat. Fry over medium heat until the color turns white.

Remove excess oil with kitchen paper and discard. Add Chinese pickles and shiitake mushrooms, stir-fry briefly, then add seasonings and season to taste. Sprinkle with sansho (Japanese pepper) and place in a freezer to cool.

Boil the soba noodles. Remove the sludge from the soba and cool in ice water. Top with Soboro (minced chicken), sprinkle with Sansho (Japanese pepper) and hot sauce, and sprinkle with green onion.
