Recipe Preparation:
- Rinse and peel the carrots (6 medium sized)
- Grate the carrots with hand held grater or food processor (as per your choice)
- Take a non-stick kadai or pan. Add 3 tbsp ghee & add the grated carrots.
- Mix well and cook this on a medium flame for 5-10min
- Add ½ lt (around 3 cups) milk.
- The milk begins to froth and then start reducing slowly
- If you are not using a non-stick kadai or pan then we need to keep on stirring the halwa.
- When the milk is reducing, add 2 tsp of cardamom powder( elaichi).
- Add 1 cup sugar or (as per your taste).
- If you do not prefer sugar, you can also add jaggery.Mix well.
- Keep stirring in regular intervals till the halwa thickens.
- Cook till the milk evaporates and you can see ghee being released.
- Add nuts or dry fruits as per your choice. I have added cashew nuts (kaju), Almonds (badam) & chironjee
- Serve hot or warm. Refrigerate the leftover halwa.
