This lemon curd recipe has been time-tested and proven to be an easy quick way to make homemade lemon curd.
Lemon Curd Recipe is added below:
2.5 cups sugar
.5 cup lemon zest (I omit personally)
1 cup lemon juice (I use bottled for canning but you do you)
3/4 cup butter
7 egg yolks
4 whole eggs
Mix and cook over a double boiler till 170 degrees
Strain mixture through a fine sieve.
Water-bath can for 15 minutes minutes but start with canning water below 180 degrees.
