Hello:)
Today I made a blueberry shortcake made with fresh bluerries from the blueberry farm.
It consists of very soft and fluffy Genoise sheets,
blueberry whipped cream and fresh blueberries.

Blueberries are in season so they are so sweet and delicious.
I'm pretty sure it's the most delicious dessert you can make with seasonal fresh blueberries :)
Make sure to try it before the blueberry season is over!


▶ Ingredients (cake mold : 15cm in diameter)

[Genoise]
: I used this recipe ([Eng Sub] 실패없는 완벽한 공립법 제누와즈 레시피 The p...)
 Slice to make 3 sheets with 1.5cm thickness.

[syrup]
 -30g water
 -15 g sugar
 -3g cassis liqueur (can be omitted)

1) Heat water and sugar to completely dissolve the sugar.
2) After cooling, add the liqueur and mix.

[Blueberry jam]
-120g blueberries (both fresh and frozen are okay)
-48 g sugar
-3g pectin
-12g lemon juice
-5g cassis liqueur

1) Puree blueberries finely.
2) Put the blueberry puree in a pot and heat it to 4-50 degrees Celcius (104~122℉).
3) Add the sugar and pectin mixture and mix well.
4) Turn on the heat again and warm it until the center completely boils .
5) Add lemon juice, cool, add cassis liqueur and mix.

[Blueberry fresh cream]
-380g heavy whipping cream
-60g blueberry jam
-15 g sugar

1) Add blueberry jam and sugar to the cold heavy cream and whip it.
2) When it gets thick, divide the cream for outer/inner part, and put the outer cream in the refrigerator until use.
3) Whip the inner part cream firmly and assemble it with fresh blueberries and cake sheets.
4) Take out the outer part cream, set the consistency with a whisk, and then apply cream on the surface.

[whipping cream drip]
-50g heavy whipping cream
-18g mascarpone cheese
-6 g sugar

1) Whisk the heavy cream, mascarpone and sugar.
2) When the thickness is about thin yogurt, pour it onto the top of the cake and use a spatula to drop it naturally on the side.


*Storage: You can enjoy the shortcake most deliciously in the refrigerator for up to 3 days. Keep it in an airtight container so that the surface does not dry out.
