[White chocolate tempering]
・Chocolate tempering divides the total weight in 3: 1 ratio.
・Chop the smaller portion.
・Melt the larger amount normally and set to 45°C for white chocolate
・Place the chopped chocolate in a large amount and place it a little and mix well
・Test at around 27 ° C and use it if it is OK。
・To avoid cooling, you can use a dryer or water at around 28 ℃.
・Finish with pouring white chocolate in the mold
[White peach and white chocolate ingredients]（canelé shape approx. 8 pieces）
・White peace（edible section）：210g （cut into 30g cubes）
・A - Egg yolk：30g
・A - Granulated sugar：25g
・Milk：120ml
・Heavy cream（45%）：40ml
・White chocolate：30g
1. Mix 180g white peach with a mixer and cut 20-30g into square cubes.
2. Take the peach from the mixer, heat and boil in a pan and serve in a plate.（180g→100g）
3. Blanch egg yolk and granulated sugar（A）
4. Boil milk and heavy cream together
5. Add 2 to 1 gradually
6. Return to the pan and thicken gradually over low heat
7. Add stir-fried peach and white chocolate and mix
8. Cool down the heat with cold water
9. Use the ice cream machine
10.Freeze with the chopped white peaches
