GERMAN POTATO SALAD

3-5 lbs Russet potatoes (peeled and cut up)
1 12 oz package bacon (cut up into 1/2 - 3/4 inch chunks)
1 small or med. onion chopped up
5-7 Tablespoons DILL relish (more if you prefer)
1/4 cup brown spicy mustard (more if needed)
1/4 cup white vinegar (more if needed)
salt and pepper to taste

cook potatoes, after draining them and they are cooling fry the bacon until well done (crispy),
Add bacon (INCLUDING GREASE) and the rest of the ingreds. Mix well. Serve warm.
