Dahi Walay Aloo

Ingredients for Boiled Potatoes:
Potato (peeled & cube cut) 1 kg
Salt 1 tsp
Water 3-4 cups

Ingredients for Cashew Nut Paste:
Cashew nuts 1/4 cup
Maghaz 1/4 cup
Water 1 cup

Ingredients for Potato Marination:
Boiled potatoes
Oil 2 tbsp
Red chili powder 1 tsp
Coriander powder 1 t sp
Cumin powder 1 tsp
Kasuri methi 1 tbsp
Paprika powder 1 tsp
Salt 1 tsp

Ingredients for Dahi Walay Aloo:
Oil (for frying) 3 tbsp
Oil 3 tbsp
Cumin seeds 1 tbsp
Green cardamom 2-3
Cloves 3-4
Green chilies (chopped) 2-3
Yogurt 1 cup
Red chili powder 1 tsp
Coriander powder 1 tsp
Cumin powder 1 tsp
Turmeric powder 1 tsp
Salt 1 tsp
Cashew maghaz paste
Fried potatoes
Kasuri methi 1 tsp
Garam masala powder 1 tsp
Fresh coriander for garnish

Directions for Boiled Potatoes Preparation:
1. In a pot heat water and add potatoes and salt. Boil until 60% done. Strain and set aside the potatoes.
Directions for Cashew Nut Paste Preparation:
2. In a preheated pan add cashew nuts, maghaz and water cook for 2-3 mins or until soft.
3. Now transfer it to a glass jar and blend it with hand blender until smooth paste has formed. Set aside.
Directions for Potato Marnation:
4. In a bowl add boiled potatoes, oil, red chili powder, coriander powder, cumin powder, kasuri methi, paprika powder, salt and mix it well. Set aside.
Directions for Dahi Walay Aloo Preparation:
5. In a pan heat oil and add cumin seeds, green cardamom, cloves, green chilies. Cook for a minute.
6. Add red chili powder, coriander powder, cumin powder, turmeric powder, salt and cook for a few seconds.
7. Now add cashew nut paste, yogurt and cook for 2-3 mins.
8. Add fried potatoes and cook until potatoes are fully done.
9. Add kasuri methi and garam masala and give it a good mix.
10. Your Dahi Waalay Aloo are ready. Garnish it with green coriander and serve.

Cooking time: 30-35 mins
Servings: 3-4
