Samak Chawal Vrat Nasta, a delectable fasting snack made from barnyard millet (samak rice), is a delightful dish commonly enjoyed during Hindu fasting periods. Here's how you can prepare this delicious and crunchy treat, along with a tangy tomato chutney to complement it.

Portion servings: 4-5 pax
Preparation time: 5 mins
Cooking time: 50 mins
Calories: 183 kcal per portion              

Ingredients:
Samak rice 1½  cup
Water 3 cups
Ghee 1 tbsp
Sendha namak 1 tsp
Ginger chopped 1 tsp
Green chilli chopped 1 tsp
Chilli flakes ½ tsp
Coriander chopped 2 tsp
Peanuts crushed 2 tbsp
Sendha namak 1 tsp
Potato boiled 2 pcs
Lemon 1 pc
Oil 2 tbsp

For chutney:
Oil 1 tbsp
Jeera 1 tsp
Red chilli powder ½ tbsp
Tomato chopped 1 cup
Senda namak 1 tsp
Green chilli chopped 1 tsp
Sugar ½ tbsp
Saunf powder 1 tsp

Method:

For Samak Chawal Vrat Nasta:
Begin by taking a mixer jar and adding samak rice to it.
Grind the rice into a fine powder to use as the base for your snack.
Heat a pan and add water along with ghee, sendha namak (rock salt), chopped ginger, green chilli, and chilli flakes. Allow the mixture to come to a boil.
Once it's boiling, add the ground samak rice flour, continuously stirring to avoid any lumps from forming.
Let the mixture cook for 4-5 minutes, ensuring it thickens and comes together.
Add chopped coriander and crushed peanuts to the mixture, giving it a delightful crunch and flavour. Mix well.
Transfer the mixture to a bowl and let it cool down.

Meanwhile, grate boiled potatoes and add a touch of lemon juice for a zesty twist. Mix the potatoes with the cooled samak rice mixture.

Take a plate or tray, apply a bit of oil to prevent sticking, and evenly spread the mixture.
Allow it to sit for 10-15 minutes to set.
After it has set, cut the mixture into squares and gently demold them onto a plate.
In a flat pan, heat some oil for shallow frying.
Carefully place the squares into the hot oil and fry them until they turn crispy and golden brown on both sides.
Once they're done, remove the crispy Samak Chawal Vrat Nasta squares and let excess oil drain on a tissue paper.
Samak Chawal Vrat Nasta is now ready to be served. This dish is perfect for vrat (fasting) days and can be enjoyed with a delicious tomato chutney.

For Tomato Chutney:
Heat a pan and add oil. When the oil is hot, add jeera (cumin seeds) and allow them to splutter, releasing their aroma.
Sprinkle red chilli powder into the oil and add chopped tomatoes. Sauté the tomatoes for 3-4 minutes until they turn soft and pulpy.
Season the mixture with sendha namak (rock salt), chopped green chilli, sugar, and saunf (fennel) powder.
Continue to cook the chutney for a while until it thickens and attains a delectable consistency.
Tangy and flavorful Tomato Chutney is now ready to serve.
This chutney perfectly complements the crispy Samak Chawal Vrat Nasta, creating a delightful combination of flavours that can be enjoyed during fasting periods or as a tasty snack at any time.
