I have a video a while back making cowboy candy and we still do the very basic same method, however my ratios of liquid to solids have changed as we've adapted the recipe to how we like to use it! :D

The ratios I used are as follows!
6lbish/3kgish Minced up jalapenos (these were frozen, so its an approximate because of liquid loss etc
2L of Apple Cider Vinegar
6kg of Sugar - you can definitely reduce this, however at this rate it ended up syrupy, which is how we like it for adding to cooking!
5TBSP Garlic Powder
2TBSP Celery Salt

Opt; Turmeric, cayenne pepper listed in a lot of recipes.

Bring the brine to a boil, add your peppers, boil for another 4-5mins, remove all the solids, bring the brine back to a boil for a few mins and then ladle over the solids in the jars.

10min processing time in a water bath/steam canner for under 1,000ft altitude, 15mins for 1000ft - 6000ft :)
