日式高湯 Dashi—50cc
高麗菜 Cabbage—100g
雞蛋 Egg—1個
五花肉 Sliced pork—5片

豬排醬 Tonkatsu sauce
美乃滋 Mayonnaise
辣椒醬 Chili sauce
海苔粉 Aonori

明太子 Mentaiko
美乃滋 Mayonnaise
蔥花 Scallion

白蘿蔔泥 Daikon puree
檸檬醬油 Ponzu
蔥花 Scallion

白飯 Steamed rice—80g
蔥 Green onion—2支
櫻蝦 Dried shrimps—1大匙
雞蛋 Egg—1個
鹽巴 Salt-1/4小匙
白芝麻 White sesame—1/2小匙
起司片 Sliced Cheese—3張

雞蛋 Egg―1顆
牛奶 Milk―150cc
砂糖 Sugar―15g
低筋麵粉 Cake flour―60g
奶油 Butter―15g

鮮奶油 Heavy cream—200cc
砂糖 Sugar—15g
芒果 Mango


Preparation(Mini Okonomiyaki)
(1) 100g of cabbage, cut into small pieces
(2) 70g of cake flour
(3) 1/4 tsp of salt
(4) 50cc of dashi
(5) 1 egg, mix them all well
(6) Add cabbage pieces, stir them evenly

Instruction (Mini Okonomiyaki)
(1) 1/2 tsp of oil
(2) Put to medium low heat
(3) Wipe excess oil
(4) Put in cabbage coated with batter
(5) Put 5 slices of pork on top
(6) Some salt & pepper
(7) Fry until bottom turns golden brown
(8) Take out the whole piece of half-done okonomiyaki and put it on a plate
(9) Put the piece back to the frying pan with undone part down
(10) Put to low heat
(11) Cover the pan with a sheet of tinfoil paper
(12) Cook for 2 minutes
(13) Take the whole piece out
(14) Cool off
(15) Cut it into small pieces
(16) One piece: Top it with daikon puree and scallion rings
(17) The other piece: Top it with tonkatsu sauce, mayonnaise & chili sauce and sprinkle some aonori powder
(18) Plating


Preparation (Pan-fried rice)
(1) 1 stem of scallion, chop into small rings
(2) 80g of steamed rice
(3) Some scallion rings
(4) 1 tsp of dried shrimp
(5) 1/4 tsp of salt
(6) 1/2 tsp of white sesame
(7) 1 egg
(8) Mix all well

Instruction(Pan-fried rice)
(1) Put the mixture in the tamagoyaki pan
(2) Fry until bottom turns golden brown
(3) Turn off the heat
(4) Take out the whole piece of half-done pan-fried rice and put it on a plate
(5) Put the piece back to the frying pan with unfried part down
(6) Turn on the stove again and pan-fry until it turns bouncy on the surface
(7) Cool off
(8) Cut it into small pieces
(9) Put a sliced cheese on top
(10) Broil them with a torch
(11) Put another piece of pan-fried rice on top of the cheese
(12) Mix mentaiko and mayonnaise together to make mentai mayo
(13) One piece, spread some mentai mayo on top of on of the pan-fried rice piece, broil it and top it with scallion rings
(14) The other piece, put another sliced cheese on top, broil it
(15) Plating


Preparation (mille-feuille mango cake)
(1) 60g of cake flour
(2) 15g of sugar
(3) 1 egg
(4) 150cc of milk (to avoid coagulation, pour in milk bit by bit in 2 to 3 times)
(5) 15g of melted butter

Instruction (mille-feuille mango cake)
(1) 3g of butter
(2) Put to medium low heat
(3) Spread the butter evenly in the pan
(4) Add a layer of batter
(5) Fry until bottom turns golden brown
(6) Flip it over
(7) Take out the pan-fried sheet
(8) Repeat step (3)~(7)
(9) Cool off
(10) 200cc of heavy cream
(11) 15g of sugar
(12) Whip the heavy cream until it starts to thicken
(13) Make sure the pan-fried sheets have been cooled off
(14) Lay 2 pan-fried sheets on the table (partially is stacked up)
(15) Spread the whipped cream on the sheets
(16) Put some mango dices on it
(17) Roll the sheets into a roll
(18) Repeat step (14)~(16)
(19) Put (17) on the decorated sheets and roll them together as a bigger roll
(20) Repeat step (14)~(16) and (19)
(21) Wrap it up with a sheet of plastic wrap
(22) Keep in the fridge for 30 minutes
(23) Take the cake roll out and cut it into pieces
