Alexa Santos (Instagram @alexawhatsfordinner) has declared that this is garlic girl summer – and we can't argue with that. 🧄 Here's how she made garlic confit using a Le Creuset Mini Cocotte.

Ingredients:
- 30 or more peeled garlic cloves
- Around 1 cup extra virgin olive oil, enough to cover the garlic cloves in the Mini Cocotte
- Sprigs of fresh thyme, optional

Directions:
1. Preheat oven to 250 degrees F.
2. In an oven-safe baking dish, add garlic cloves, olive oil, and thyme. You want the cloves to be fully submerged in oil.
3. Cover and bake in oven until the garlic is golden and tender, about 2 hours. Enjoy on toasted bread, mixed in with your favorite pasta, and more!
