Lemongrass Chicken Stir Fry | How to Cook Vietnamese Food Like a Pro

Vietnam’s famous Lemongrass Chicken is barbecued and served on a skewer. I have recreated the dish in my own kitchen by stir frying chicken with garlic, chilli and lemongrass. Their aroma and flavor together is potent and hunger evoking. Watch the video till the end to check out how I create a sticky, sweet and savory sauce that goes so well over a bed of Jasmine rice.

To prepare the dish, prepare the fresh lemongrass stalks and finely chop. In the video I have demonstrated how to prepare the lemongrass stalk. Then slice shallots, roughly chop garlic and finely chop red bird’s eye chillies.

To prepare the sauce, use a medium sized mixing bowl and add fish sauce, sugar, pepper and mix well.

To cook the lemongrass chicken, use a pan, add a generous amount of oil. As soon as the oil heats up, introduce the chicken. Stir once to ensure the chicken pieces are coated with oil on all sides and let the chicken attain a light golden color. Then flip and let the same on the other side.  Once this is done, remove excess oil and add sliced onions. Shallots are made of fine layers and blend very well with the sauces and dressing. I prefer shallots for my Thai and Vietnamese food, red onions for my Indian curries and yellow onions for bolognese sauce.

As soon as the shallots become slightly golden, throw in the lemon grass, garlic & red chillies. Mix well and let the garlic lose it’s raw flavor. The combination of lemongrass, garlic & chilli is like the holy trinity. The combined flavor just hits you and you start feeling hungry!

Then add in the sauce. Mix well and let the sugar caramelize everything. The savory fish sauce and the sweetness of sugar will just make your chicken ooze with flavor! Let all the ingredients simmer for a few mins. Scrape the bottom of the pan. A bit of caramelization is good.

Add more flavor! Serve this amazing Lemongrass Chicken over a bed of jasmine rice. Slice some cucumbers on a bias. Coriander and red chillies for garnish.

Chicken 500gm
2 Shallots
2 Bird’s Eye Red Chilli
3 Garlic Pods
½ tsp Ground Pepper
2 tbsp Sugar
2 tbsp Fish Sauce
2 Lemongrass stalks
Cooking Oil
