In this one, I am sharing a super simple Italian Inspired Sauteed Asparagus recipe, that is delicious and healthy. Asparagus is very versatile, and this recipe relies heavily on anchovies, capers and garlic to add the layers of flavour.

For all of you who are new to puttanesca, it has all the goodness of anchovies, capers, chillies, garlic and extra virgin olive oil (show video of all ingredients in slow-mo; Shenaz opening anchovy can, pouring out capers, swirling garlic, chilli flakes)

I know some of you may have some reservations about anchovies and I completely understand. But this recipe calls for completely disintegrating the anchovies into the extra virgin olive oil and will only lend its  flavour to the oil. And together with the chopped garlic it sort of is going to form this perfect marriage that leaves you wondering where the umami is coming from.

Before getting my hands wet with anchovies and capers, I am first prepping the asparagus. Make sure to check out our video on All you need to know about Asparagus.  

I am cutting the stalks of asparagus on bias or diagonally. This style of cutting would make our stir fry look gourmet.

Then I am mincing the anchovies and capers together and then adding garlic to mince further. And finally mixing some aromatic red chilli flakes to the minced ingredients.

I am using a wok and adding some extra virgin olive oil. Then I am adding the minced mixture that I had prepared. Giving it a good stir, I am letting it sit for 1 min and then adding my asparagus. The idea is to cook the stalks in blasting heat for a few minutes; letting the anchovies and capers disintegrate. I am also looking for the asparagus to completely absorb the sauce and become one with the flavors of the amazing ingredients we have added. You may want to check for salt, before adding any because the capers and  preserved anchovies are already salty. After around 4-5 min, the stir fry is ready.

Asparagus
Preserved Anchovies
Capers in brine
Garlic
Chili flakes
Olive Oil

Total cooking time 5-10 min

Method
Cut asparagus diagonally. Mince anchovies, capers together then add garlic pod. Then add chili flakes to the minced ingredients. In a wok add oil and add the minced ingredients. After stirring for a min or two add the asparagus. Stir continuously for 2-3 minutes in high flame. Check for salt before adding, since capers and anchovies are already salty. Serve hot
