Ingredients
7 boiled eggs

For Tomato Cashews paste
3 cup water
4 tomatoes
1-inch ginger
9 cloves
2 cardamom pods
3 cloves
2 tbsp cashews

For Egg Lababdar
2 tbsp oil
1 bay leaf
1 tsp cumin seeds
1 onion - finely chopped
Tomato Cashews paste
⅓ tsp turmeric powder
1 tsp cumin powder
1 tsp coriander powder
1 tbsp red chili powder
1 tbsp salt
1 cup water
1 tsp Kasuri methi
1 tsp garam masala powder
3 tbsp fresh cream
2 tbsp freash coriander leaves - chopped
1 egg white grated

Process
Cut 6 eggs into half and save one egg for after use.

For Tomato Cashews paste
In a wok take water, and bring it to boil. Add tomatoes, ginger, cloves, cardamom pods, cloves, and cashews cover and cook for 10 minutes.
Open the lid, drain the water, and cool it down.
Add all boiled ingredients to a mixing jar and make a smooth paste.

For Egg Lababdar
To a wok add oil, bay leaf, cumin seeds. When cumin starts crackling add onion, and saute until onion is softened.
Add Tomato Cashews paste, turmeric powder, cumin powder, coriander powder, red chili powder, salt cook until aroma is released.
Add water mix it well cover and cook for 10 minutes. Add Kasuri methi, garam masala powder, fresh cream mix all well.
In the gravy add egg give a stir cover and cook for 4 minutes.
Open lid add coriander leaves, egg white mix them.
Now Egg Lababdar is ready to eat. Garnish with grated egg white. Serve it hot with Roti and Naan.
