Welcome to Sandra & Geronimo's Kitchen....this is how we like to make our homemade Refried Beans. A great side dish for any Mexican Food, or a wonderful filler for Burritos or Quesadillas.
How to make homemade Refried Beans
Refried Beans
Ingredients:
3 cups Pinto Beans
1 Onion, sliced
2 tbsp Tomato Bouillon
1 tbsp Oregano
1 cup Coffee
3 Garlic Cloves, minced
2 tbsp Vegetable Oil
Water
Pour 8 cups of hot Water over Pinto Beans in Pressure Cooker, stir and cover, soak for 2 hours.
Drain and rinse the Beans.
Add half of the Onion Slices, Bouillon, Oregano, Coffee and 7 cups of Water, stir.
Close Lid and lock.
Cook 50 Minutes (following your Pressure Cooker instructions)
Sauté other half of Onion Slices in Vegetable Oil, until golden.
Add minced Garlic and Pinch of Salt, continue cooking for 1 Minute.
Open Pressure Cooker after natural depressurizing.
Remove almost all the cooking Liquid and mash the Beans.
Add sautéed Onion Mixture and stir.
Salt to taste, simmer to thicken the Beans to your liking, if needed.
Top with dried Cheese.
Enjoy!
