It has been a long time since we want to try the cuisine of Riccardo Gaspari and how he cooks the mountain in his retaurant SanBrite in Cortina d'Ampezzo, one Michelin star.
Together with his wife Ludovica Rubbini, maitre and general manager, with perseverance, commitment and passion they have created a reality that goes beyond the restaurant, raising the animals from which they obtain a small dairy and cured meat production, in addition to the organic vegetable garden, with an approach that allows them to minimize both waste and the external supply of raw materials (and in any case always bought from small local producers).
All this is reflected in the dishes, whose genesis starts from the local ingredient, keeping its identity strong but reinterpreting it in a contemporary way: like the spaghetti with mountain pine, which we particularly appreciated.
