Today, I'm going to make a raspberry whipped cream cake filled with delicious raspberries.
Raspberry cream with raspberry jam is a cake that has the best taste and smell.
If you do not want to add gelatin to the jam, add the total amount of starch to 33g.
I think it's easier to use strawberry-flavored compound chocolate for chocolate crumbs.
There is no need for a particularly perfect icing.
It's easy to make a lovely cake with a pretty pink color.

● Fluffy vanilla sponge cake
( Mold size: 15cm (diameter) *2 pcs )
4 eggs
100g sugar (1/2 cup)
a pinch of salt
5ml vanilla extract (1tsp)
25g honey (1Tbsp)
40 g milk ( 3 Tbsp + 1 tsp)
125g cake flour ( 3/4 cup + 2Tbsp)
40g unsalted butter ( 2 Tbsp + 2 tsp)
♥ Raspberry Jam
300g Raspberry puree ( 1 cup + 1/4 cup )
22 g sugar ( 1 Tbsp + 2 tsp)
10 g cornstarch ( 1 Tbsp + 1 tsp)
3g gelatin (can be replaced with 23g starch)
♥ Raspberry whipped cream
65g white chocolate (1/3 cup + 1Tbsp )
65g hot heavy cream ( 1/4 cup + 1 Tbsp )
12 g sugar ( 1 Tbsp )
5ml Framboise Liqueur ( 1 tsp)
55g raspberry jam
365g cold heavy cream (1 cup + 1/2 cup + 2 tsp)
Food coloring (optional)
