Chilli Idli by Food Prescription

Complete recipe of Chilli Idli/Fusion Idli
Ingredients:
• Idlis 4-5
• Refined flour (maida) 1/4th cup
• Corn flour 1/4th cup
• Baking powder 1/2 tsp
• Salt & Black pepper to taste
• Water as required
Method:
• Cut the idlis into strips (4 pieces in 1 idli) and keep aside.
• In a mixing bowl add refined flour, corn flour, baking powder, salt & pepper, and water, mix well to make a semi-thick slurry.
• Coat the idli pieces with the batter and deep fry in the hot oil until crisp and golden brown. Remove it on a plate and keep it aside.

For making idli chilli
Ingredients:
• Oil 2 tbsp
• Garlic 8-10 cloves (finely chopped)
• Ginger 1 inch (finely chopped)
• Green chillies 2 nos. (slit)
• Capsicum (1 medium-sized, diced)
• Onion petals ( 1 medium-sized)
• Red chilli sauce 1 tbsp
• Soy sauce 1 tbsp
• Vinegar 1/2 tbsp
• Salt & Black pepper to taste
• Water 1/4th cup
• Cornstarch 1 tbsp + water 2 tbsp
• Crispy fried idlis
• Spring onion greens (chopped)
Method:
• In a pan, add oil, ginger-garlic, and green chillies, sauté for 30 seconds or a minute, add diced capsicum and onion petals and further sauté it for 3-4 min on medium to high flame.
• Now,  add red chilli sauce, soy sauce, vinegar, and Salt & Black pepper to taste, mix and sauté it for another 1-2 minutes.
• Add water and mix, add the cornstarch and water mixture, and cook until the sauce thickens.
• Add the crispy fried idlis and toss them well in the sauce.
• Add some freshly chopped spring onions greens, mix gently and coat it well.
• Your crispy,  yummy, and delicious idli chilli is ready to be served, serve hot.
