This time, we will make juicy and tender pies with apples and pears. The dough for the pies is entirely egg-free, and we will try a new mixture for brushing that gives the pastries an extraordinarily matte, velvety surface. This yeast dough stays soft and tasty for a long time, doesn’t get stale by morning, and if reheated, few can tell it apart from fresh baking. flour – 20 g = 1 tbsp.
dry yeast – 7 g = 2 tsp. without a heap
sugar – 2 pinches
warm water – 60 ml = 4 tbsp.
✅ Dough:
sponge
sugar – 40 g = 3 tbsp.
salt – 5 g = 1 tsp. without a heap
kefir/sour cream – 30 g = 2 tbsp.
warm milk – 230 ml = 1 cup* + 2 tbsp.
butter – 60 g = 3 tbsp.
flour – 500-550 g = 4 (+/-) cups*
vegetable oil – 20 ml = 1.5 tbsp.
✅ Filling:
apples – 500 g = 4 pcs.
pears – 500 g = 4 pcs.
butter – 30 g = 1.5 tbsp.
sugar (to taste) – 40 g = 3.5 tbsp.
lemon juice (optional)
✅ For brushing:
butter – 15 g = 1 tbsp.
powdered sugar – 5 g = 1 tsp.
flour – 7 g = 0.5 tbsp.
water – 15 ml = 1 tbsp.
✅ Additionally:
butter – 20 g = 1 tbsp.
water for sprinkling the dough

❗Yield: 15 pieces
🥛*cup volume 200 ml
🌡Baking temperature: 200 °C / 392 °F
