The authentic recipe for pasta alla carbonara with guanciale, eggs and pecorino, as they are made in the Lazio (Rome) region of Italy. Our recipe has been tested by millions of readers, it has been published on the blog for many years.
Spaghetti carbonara is very popular here in Romania, their recipe being often (unfortunately) distorted: with bacon (smoked) or with cream, etc.
Instead of guanciale (pork jaw or cheek) you can use pancetta (dolce, non affumicata) - that is, that Kaiser from the pig's belly, not smoked. It is also allowed to use parmesan (parmiggiano) instead of pecorino. Some recipes provide for the exclusive use of yolks, others also allow whole eggs. The result of pasta carbonara made according to the above recipe is a wow! Their sauce is smooth, creamy and perfectly envelops the cooked "al dente" spaghetti.
