Bolillo Rolls
1 1/2 cup warm water
2 tablespoons sugar
1 tablespoon dry yeast
4 cups all purpose flour
1 1/2 teaspoons salt
2 tablespoons lard or bacon grease
Add sugar and yeast to warm water and let sit for 5 minutes to activate yeast.  Place flour, salt and lard in mixing bowl, add yeast mixture and mix until the dough comes away from bowl. With hook attachment knead dough for ten minutes.  Place dough into greased bowl and cover with plastic wrap.
Allow dough to double in size, this takes about 45 minutes to an hour.  Turn dough out onto counter and portion into 6 dough balls. Shape dough into bolillo shape and place on baking tray.  Cover with clean kitchen towel and allow dough to double in size.  Meanwhile preheat oven to 425 degrees.  Using sharp knife cut a slit lengthwise into rolls.  Place rolls in oven and throw a large handful of ice into oven.  Cook for ten minutes, and then reduce heat to 375 degrees and cook for an additional ten minutes.   Remove rolls and place on rack to cool.

Sonoran Hot Dogs
Slice bolillo rolls on the side, spread inside with mayonnaise, place cooked hotdog that has a slice of bacon wrapped around it, spoon on pinto beans, pico de gallo that has avocado added to it, shredded cheese, drizzle mayonnaise that has been thinned out with lime juice or you can use Mexican Creme, top with candied jalapenos and hot sauce.  Enjoy!!
