Godeungeo Kimchi Jjim (Braised Kimchi with mackerel)

[ingredients]

1/4 heads of overly fermented Kimchi(400g)
1 can of mackerels(400g)
1/2 pieces of onion(180g)
3 pieces of Cheong Yang pepper(20g)
2/3 cups of green onions(50g)
4 tbsp of coarse red pepper powder(20g)
2 tbsp of fine red pepper powder(10g)
2 cups of water(400ml)
2 tbsp of minced garlic(30g)
2 tbsp of soy beanpaste(30g)
1 tbsp of brown sugar(10g)
1/3 tbsp of minced ginger(5g)
2 tbsp of dark soy sauce(20g)
2 tbsp of sesame oil(15g)

[method]

1. Slice onion with width of 0.5cm.
2. Finely cut green onions.
3. Finely cut Cheongyang pepper.
4. Mix minced ginger, minced garlic, soybean paste, brown sugar, sesame oil, fine red pepper powder, coarse red pepper powder, dark soy sauce, canned mackerel water in a bowl.
5. Cut off bottom part of Kimchi and place on bottom of the pot.
6. Place macekrels on top, get rid of fishbones with meat facing downwards.
7. Add green onions, Cheongyang peppers and onions.
8. Add water, marinade and boil.
9. When it simmers, lower fire to medium and simmer for 10 more minutes.
