Old school jam & coconut cake & pink custard :) Easy recipe

So here’s the winner of the poll. This just takes me straight back to primary school sitting on the dinner hall :) This is a super easy recipe for sponge cake squares topped with gooey jam and desiccated coconut! Had to be served with the terrifying pink custard :D

Makes 12 squares when you use a 30 x 18cm rectangular tin or dish

225g/2 sticks/1 cup/8oz  Room temperature unsalted butter
225g/1 cup/8oz Self raising flour
225g/1 cup/8oz Caster sugar
4 Medium eggs
1 Teaspoon bicarbonate of soda
**Optional**1/2 Teaspoon flavouring (vanilla, coconut or custard work well)

225g/1 cup/8oz Raspberry or strawberry jam
80g/1 cup Desiccated coconut

500ml/2 cup Custard
1 couple of drops of red food colouring
