Mutton Pasandey | Eid Special Pasandey Recipe

Mutton Pasandey is a traditional Mughlai dish known for its rich and creamy flavors. Below is a detailed recipe to prepare this delicious dish.


INGREDIENTS & INSTRUCTIONS:-

Ingredients:-
For Powder:
Roasted Gram(chane)-1/4 cup
Cashews(kaju)-1/4 cup
Poppy Seeds(khaskhas)-1 tbsp
Desiccated Coconut(nariyal burada)-1 tbsp

For Marination:
Prepared Powder-whole
Yoghurt(dahi)-1/4 cup
Ginger Garlic Paste-1 tbsp
Red Chilli Powder-1/2 tbsp
Garam Masala Powder-1 tsp
Salt-1 tsp
Mutton(Goat Meat)-750 Grams(thinly sliced tendered pieces)

For Cooking:
Oil-1/4 cup
Cinnamon Stick(dalchini)-2 inches
Cloves(laung)-8 nos
Black Cardamom(badi ilaichi)-1 nos
Green Cardamoms(choti ilaichi)-8 nos
Bay Leaves(tez patte)-2 nos
Ginger Garlic Paste-1 tbsp
Yoghurt(dahi)-1/2 cup
Coriander Powder(dhaniya)-2 tbsp
Red Chilli Powder(lal mirch)-1 tbsp
Turmeric Powder(haldi)-1 tsp
Salt-as per taste
Water-2 tbsp
Birista(fried onion)-of 3 medium onion(crushed)
Marinated Mutton
Water-1 cup
Fresh Coriander-as required(chopped)

Instructions:-

1-Powder Making:
In a grinder jar, add roasted gram, cashews, coconut & poppy seeds. Grind to make fine powder.

2-Meat Tendering:
Take thinly sliced mutton pieces and flatten them beating by tenderiser hammer or any heavy thing.

3-Marinate the Mutton:
 •In a large bowl, combine the powder, yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala powder and salt.
 •Add the mutton slices to this marinade and mix well to ensure the pieces are well coated.
 •Cover and refrigerate for at least 1 hour, preferably overnight for better flavor absorption.

4- Prepare the Gravy:
•Heat oil or ghee in a large pan over medium heat.
•Add cloves, cardamoms, bay leaves and cinnamon stick. Sauté until they release their aroma.
•Add the ginger-garlic paste. Sauté for a minute until the raw smell disappears.
•Add Yogurt, coriander powder, red chilli powder, turmeric powder and salt. Sauté till oil separates.
•Add Water and give it a stir.
•Add Crushed Birista and cook for a minutes.
•Now add the marinated mutton to the pan. Cook on high heat for 5 minutes until the mutton pieces changes colour.
•Reduce the heat to medium, add water and cover the pan.
•let it cook for 30-40 minutes or until the mutton is tender. Stir occasionally and add a little water if necessary to prevent sticking.
•Once the mutton is tender, uncover the pan.
•Adjust salt and seasoning if needed.

5-Garnish and Serve:
•Garnish with fresh coriander leaves.
•Serve hot with naan, roti, or steamed rice.
