Chicken Cheese Boti | Chicken Boti In White Cheese Sauce

INGREDIENTS & INSTRUCTIONS:-
Ingredients:
For Chicken Marination:
Chicken(Breast)-500 Grams(cubes)
Yoghurt-1/2 Cup
Ginger Garlic Paste-1 Tbsp
Kashmiri Chilli Powder-1/2 Tbsp
Coriander Powder-1/2 Tbsp
Red Chilli Powder-1 Tsp
Cumin Powder-1 Tsp
Garam Masala Powder-1/2 Tsp
Black Pepper Powder-1/2 Tsp
Salt-As Per Taste

For White Sauce:
Butter-2 Tbsp
Flour(Maida)-2 Tbsp
Milk-1 1/2 Cup or 350 ml
Black Pepper Powder-1/2 Tsp
Salt-As Per Taste

For Cooking:
Oil-2-3 Tbsp
Marinated Chicken
White Sauce-As Required
Mozzarella Cheese-As Required
Cilantro-As Required(chopped)
Red Chilli Flakes-As Required.

Instructions:
1. In a bowl, mix yogurt, ginger garlic paste, red chili powder, cumin powder, coriander powder, kashmiri powder, black pepper powder and salt to form a marinade.
2. Add the chicken cubes to the marinade, ensuring they are well coated. Let it marinate for at least 30 minutes in the refrigerator.
3. In a pan over medium heat, melt the butter. Add flour and stir well to form a paste. Cook the paste till raw smell disappears.
4. Add Milk gradually in 2-3 batches and keep whisking to prevent lumps from forming. Once the sauce has thickened, season it with salt, pepper, and a pinch of nutmeg if desired. Taste and adjust seasoning as needed. Set the white sauce aside.
5. Heat the oil in Separate pan over medium heat, add the marinated chicken and spread over a single layer.
6. Cover the pan and cook for 5 minutes. Chicken will release water so no extra water needed.
7. Uncover the pan. Cook the chicken until water reduces.
8. Lower the heat and spread the prepared white sauce over the chicken in a layer.
9. Sprinkle the grated mozzarella cheese over white and cover the pan till cheese melts.
10. Once the cheese has melted, Garnish with some chopped Cilantro and red chilli flakes.
11. Serve hot and enjoy your Chicken Cheese Boti.
