Introduce a very easy to make this side dish pickles !
Although it's a short period to whip up but it still can enjoy full of flavorful ~ !
The best accompaniment to many of your main dishes !
It will turn into an amazing side dish ! (๑˃̵ᴗ˂̵)و

Japanese Pickled Daikon Radish / Kankitsu to Konbu no Daikon Asadzuke
Season 2 - Episode 7
[ 1 Serving ]

[ Ingredients ]
Daikon radish - 250gm
Carrot - 1/3 piece
Lemon peel ( yellow or green ) - some
Fresh red chili pepper - 1/3 stalk
Dry kelp - 8~10 cm

[ Seasonings ]
Salt - 1/4 teaspoon

[ Pickling Marinade ]
White vinegar - 2 tablespoons
Sugar - 1 tablespoon
Salt - 1/2 teaspoon

[ Method ]
1. Daikon radish & carrot, finely sliced.
2. Sprinkle with salt, rub evenly & leave it for 10 minutes, release moisture.
* salt will help draw out the water from the vegetable & give them a base flavor !
3. Peel the lemon & finely shredded.
4. Chili pepper finely sliced.
5. Combine all the pickling marinade ingredients into a container & mix well.
6. Squeeze excess water out of vegetables & mix well with pickling marinade.
7.Dried kelp cut into small pieces with scissor & add into pickles mixture, mix well.
8. Leave it for 10~15 minutes & ready to serve.
* keep it into container & refrigerator for up to 1 week ~ !
