How to make Bitter Melon & Egg Stir Fry

Bitter Melon & Egg Stir Fry is another classic Asian dish! It's a fast and easy side dish to add to your dinner spread!

Tips when picking your bitter melon. If you want your melon less bitter choose melons that are smoother with grooves that are farther apart. The melons that are more wrinkled with grooves close to each other are more mature and bitter.

I like my bitter melon with a little crisp but if you prefer it softer just cook it a bit longer!

Ingredients:
1 bitter melon
2 green onions chopped thinly
4 eggs
1 tsp fish sauce
salt and pepper to taste
1 tbsp minced garlic
1 tbsp vegetable or neutral oil

Instructions:
1. Cut the bitter melon in half and use a spoon to scoop out the white part and seeds.
2. Cut the bitter melon into 1/4" slices and soak in salt water for 10 minutes to reduce the bitterness.
3. Whisk together 4 eggs and 1 tsp of fish sauce.
4. Drain and rinse the melon slices well.
5. Heat 1 tbsp of vegetable oil on medium high heat and add 1 tbsp of minced garlic. Cook for 30 seconds or until fragrant.
6. Add in the melon slices and cook till your desired consistency. The longer you cook the softer it will be.
7. Pour in the eggs and season with some salt and pepper. Push the eggs to the center as they cook and lightly scramble. I like my eggs a little soft and wet.
8. Add in 2 thinly chopped green onions and give it a quick stir.
9. Plate and add cracked pepper and enjoy! You can even have a side of fish sauce with fresh chilies in it to dip if you like!
