I SUCK AT BAKING, but these came out so good! It’s like a real cookie you would buy at a bakery or something… I can’t believe my first @bitesbybadwood video is baking lol but I had to share because I’ve been craving chocolate chip cookies for a long time. With my weird diet restrictions, I could never find a recipe that sounded good. I actually found one on google and then substituted the ingredients to what I can have within my restrictions. Thank you to @ketologic for supplying the chocolate! These chocolates are bomb on their own. Big fan.

P.s. future @bitesbybadwood videos will be more in depth because i'll be cooking, so i will be explaining as I go along with detail. This one was just for fun.

INGREDIENTS:
1 cup “Super-Fine Almond Flour” by Bob’s Red Mill. Must use this brand for almond flour! I believe the consistency will differ by brand.
1/4 cup coconut flour
1 teaspoon baking soda
1/4 teaspoon salt
6 tablespoons vegan butter at room temperature. Use “Miyoko’s Creamery”. You can find that at Trader Joe’s.
3/4 cup monkfruit sweetener by Lakanto. (keto / low carb)
6 tablespoons natural almond butter at room temperature. No sugar or salt added.
1 1/2 tablespoons vanilla extract
1 large egg at room temperature
6 pieces of “Keto Indulge” chocolates by Ketologic

NOTES:
To make sure these come out exactly the same as mine, you definitely need to use the same almond flour by Bob’s Red Mill & monkfruit sweetener by Lakanto.
You can swap the chocolate chunks for chocolate chips by Lily’s. They’re sugar free! I use them for everything. You can find them at any market now.
The sweetener will prevent the cookies from spreading while baking so you can flatten them with a spatula before baking to make sure they’re not too puffy.
Best served warm! When you reheat these, they taste just like they just came outta the oven!
You will need an electric hand mixer (or stand mixer).
Yields 10 big cookies.
Store in airtight container for up to 3 days.
This recipe is keto

DIRECTIONS:
In a mixing bowl, stir together the almond flour, coconut flour, baking soda and salt. Set aside.
In a large mixing bowl with electric hand mixer, beat together the vegan butter, monkfruit sweetener, almond butter, and vanilla extract for about 1 minute on medium speed.
Beat in the egg on low until well combined.
Stir in flour mix, little by little.
Preheat oven to 350 °F (175 °C) and line a baking sheet with a piece of parchment paper.
Fold 6 pieces of Ketologic chocolates in parchment paper and crush with mallet. Add chocolate chunks to your dough.
Roll the dough into 10 balls and place on baking sheet.
Bake for 13 minutes until the center of the cookies no longer appear wet. Let them continue to cook as they sit on the baking sheet out of the oven, before you try to pick them up!
Eat that shit up! Dip ‘em in some nut milk. I chose unsweetened vanilla almond milk.
