ഇനി പേടിക്കാതെ ആർക്കും ഉണ്ടാക്കാം പ്ല...

1 cup = 250ml

Almonds - 1 handful
Pecans - 1 handful
Dates - 1 handful
Cranberry - 1 handful
Raisins- 1 handful
Grape juice - ½ cup
Sunflower oil - 1 cup
Powdered sugar - 1 cup
Eggs - 2
Boiling hot water - 1 cup
Cardamom - 8 nos
Cinnamon - 1 big stick
Cloves - 10 nos
Nutmeg powder -
Vanilla essence - 1 tbsp
Plain flour - 1 ¾ cup
Baking powder - 1 tsp
Baking soda - ¼ tsp
Salt - ½ tsp
8 inch circular cake tin

Hi everyone, today let’s make a delicious plum cake for Christmas.
Please make sure to use all the ingredients in the exact quantity mentioned in the video.

To prepare the cake, first start preparing the caramel by adding a cup of sugar in a thick bottomed saucepan, over a very low flame and keep a cup of water to boil over the other stove.
Occasionally start the caramel until the caramel starts to turn golden brown in colour and watery in texture.

Meanwhile, grind 10 cardamom pods, a big piece of cinnamon, 10 cloves and nutmeg in the smallest jar of a mixer grinder along with some sugar so that the spices will grind into a fine powder.

Once the sugar has caramelised into a liquid consistency, add the boiling hot water into the caramel and combine well without any lumps remaining of the caramel, next add a cup of oil into the same sauce pan and mix well.

When this mixture comes to a boil, add half a cup of grape juice or orange juice or grape wine and mix.
After it comes to a boil, add chopped dates, chopped cranberries and raisins, and let it come to a boil once again so that the dry fruits can soften a little..
After boiling, turn off the flame and add the powdered spices from the mixer grinder directly into this mixture.
Now, let the mixture cool down.

While the mixture is cooling down, take a large mixing bowl and keep a sieve over it and add 1 ¾ cup of plain flour, a teaspoon of baking powder, a quarter teaspoon of baking soda and half a teaspoon of salt and sift it  into the mixing bowl.
Next, break the two eggs into a mug and whisk it with a hand whisk or a beat until fluffy.

Once the liquid mixture has cooled down, add the chopped nuts and a teaspoon of vanilla essence into it and mix well.
Make sure that the mixture has completely cooled down, and add the flour mixture and mix well and then add beaten eggs and combine everything together.
With this, the batter is ready to be transferred into a cake tin of which the bottom has been lined with a butter paper.

It is best to use an 8 inch cake tin for the quantity of ingredients mentioned in this video.
The batter should fill up to 3 by fourth of the cake tin.

If you’re going to bake this cake in an oven, bake it for 175 C or 350 fahrenheit for around 45mins.
I am baking this cake on the stove top, in an iron pan with a tight lid for one hour and 15 minutes on a medium to low flame..

Place an elevated base in the pan and place the cake tin on the base and cover it with the lid and let it bake on a medium to low flame..
Keep checking the cake after around one hour because the baking time will depend on the flame and also on the size of the pan you are using.
