Fruit cake

Dates - 1 ½ handful, chopped
Cranberry - 2 handful, chopped
Raisins - 1 handful
Dried kiwi - 1 ½ handful
Almonds - 1 handful
Pecans - ¾ handful
Walnuts - 1 ½ handful
Cinnamon sticks - 2
Star anise - 2 small
Cloves - 3 nos
Cardamom pods - 15-20nos
Nutmeg powder - 1 tsp
Oranges - 2 (only peel)
Salted Butter - 1 ⅓ cup
Salt - ½ tsp (only id butter is unsalted)
Eggs - 2 (room temperature)
Vanilla essence - 1 tbsp
Powdered sugar - 1 cup
Water - 1 cup
Maida - 1 ¾ cup
Baking soda - ¼ tsp
Baking powder - 1 tsp
Rum - ¾ cup





Hi everyone, today let’s make a delicious fruit plum cake for Christmas.
Please make sure to use all the ingredients in the exact quantity mentioned in the video.

Firstly, caramelise a cup of powdered sugar in a saucepan over a medium to low heat until it turns into a golden liquid and then add a cup of boiling hot water into the caramel and combine well.
Into the same saucepan, add ¾ cup of Rum and keep the flame high.
Next, add one and a half cup of water into the same sauce pan and let it melt and combine with the mixture on a high flame.

Once the butter has melted well with the mixture, add the dried fruits (kiwi, raisins, dates, cranberries), into the mixture and let it come to a boil for a couple of so that the dried fruit skin softens a bit.
Do not add the nuts at this point.
Turn off the flame and let the mixture cool down after it has boiled for two minutes after adding the dried fruits.


While the mixture is cooling down, take a large mixing bowl and keep a sieve over it and add 1 ¾ cup of plain flour, a teaspoon of baking powder, a quarter teaspoon of baking soda and sift it  into the mixing bowl.
Sift the mixture twice.


Next, break the two eggs into a mixing bowl and beat until frothy with a beater, and a tbsp of vanilla essence and beat again to combine.

When the liquid mixture has cooled down, add chopped pecans, chopped almonds and chopped walnuts and mix.

Next, add the beaten egg mixture and The flour mixture and combine everything really well using a spatula with a folding motion until the batter comes together.

When the batter is ready, transfer the batter into a cake tin which has been lined with a butter paper and then place it in the oven at 350°C to bake.. after baking for around 45 minutes, cover the top of the cake tin with an aluminium foil or a butter paper to prevent the top of the cake from going dry.
My cake was ready in one hour and five minutes.. you can check if the cake is done by breaking a toothpick in the middle of the cake and by seeing if it comes out clean.

When the cake has cooled down completely , you may also brush some rum on top of the cake.
This step is completely optional, but will add a lot to the overall flavour of the cake.

Let the cake rest in the cake tin for a whole day and then you may cut and serve..

Also keep in mind that the baking time will depend on the sickness and size of the baking tin that you are using, so make sure that you keep an eye on the cake after around 45 minutes of baking..
