Rangiri cut is a Japanese cutting technique which is used to cut odd shaped veg and making them relatively uniform

Benefits of this technique include:

Cooking time - even sized pieces mean even cooking times
Imparting flavor - more surface area means more area to absorb flavors
Ingredient usage - a lot of people won't use an ingredient or vegetable because they are intimidated, but being able to properly prepare relieves some of that stress
Looks awesome - it looks way better thank just carrot discs (or any veg disk for that matter)
