Try these Millet Idlis which are soft and fluffy, packed with nutrients and make for a delicious and wholesome meal for anytime of the day !!

INGREDIENTS👇
*1/2 cup pearl millet/ bajra/ बाजरा
*1/2 cup finger millet/ ragi/ रागी/ नाचनी
*1/4 tsp fenugreek seeds/ मेथी बीज
*1/4 cup flattened rice/ poha/ पोहा
*1/2 cup split urad dal/ husked black gram/ उरद दाल
*1 tsp Salt or as required/ नमक
*some water for soaking, rinsing, grinding and cooking the idlis

PEANUT  CHUTNEY
*1/2 cup Peanut/ मूँगफली
*1/4 cup desiccated Coconut/ नारियल
*1/2 inch roughly chopped Ginger/ अदरक
*2 dry red chillies/ सूखी लाल मिर्च
*small piece Tamarind/ इमली
*3/4 tsp Salt or as required/ नमक
*3/4 cup Water/ पानी

TEMPERING/ तडका
*1 tbsp oil/ तेल
*1/2 tsp Mustard seeds/ राई
*few Curry leaves/ कड़ी पत्ता
*a pinch of asafoetida/ हींग
*1 dry red chilli/ सूखी लाल मिर्च

INSTRUCTIONS
1- in a large bowl, add millets followed by urad dal, fenugreek seeds and poha. Add in some around 2 1/2 cup water, cover and let them soak for around 6-7 hours.
2- Now drain the water and rinse them a couple of times. add them into the blender along with the 3-4 tbsp water ( don’t add all the water at once. Use as required to make a smooth and thick batter). Transfer the batter in a large bowl, cover and let the batter ferment overnight ( the fermentation process may take a little longer time if you are living in a colder place ).
3- once fermented the batter will become frothy and bubbly. Add in the salt and give a gentle mix. Grease your idli mould nicely with oil and start filling each cup with spoonful of batter ( make sure not to over fill ).
4- heat 1 cup of water in your idli steamer. Place the idli mould, cover the steamer and let it cook for around 15 minutes on low-medium heat. ( The cooking time varies depending on the steamer. So check the idlis with a toothpick and it doesn’t come clean, cook the idlis for few more minutes ).
5- Now turn off the heat and carefully remove the idlis with the help of a spoon.

PEANUT  CHUTNEY
1- On a medium heated pan, add peanuts and roast for around 5 minutes till they become crunchy. Turn off the heat and while the pan is still hot, add coconut and roast for 1 minute. Now let them cool completely.
2- Add roasted peanuts and coconut in a grinder/ blender followed by ginger, red chilli, salt, tamarind and water and blend until creamy. Transfer the chutney in a bowl and keep it aside.
3- For tempering, heat oil in a pan on medium heat. Add mustard seeds and let them crackle. Now add rest of the ingredients of tempering, give a quick mix and quickly pour the tempering over chutney. Mix very well and the chutney is ready to be served with soft and yummy Millet Idlis !!
