To Make Vada

Urad Dal - 1 Cup ( 250 Ml ) (Buy: https://amzn.to/3KBntVh)
Green Chilli - 2 Nos
Ginger

Chilled Water

To Make Curd Mixture

Fresh Curd - 800 Gms
Salt  (Buy: https://amzn.to/2vg124l)
Water
Powdered Sugar - 2 Tbsp (Buy: https://amzn.to/45k7SkY)

Prep Time: 5 mins
Cook Time: 30 mins
Servings: 4-5

Method:

1. Take the soaked urad dal, green chillies, ginger and salt in a mixer jar by adding some chilled water.
2. Grind everything to a fine paste, add cashewnuts, raisins. Mix and keep it aside.
3. For the curd mixture, take curd in a large bowl. Add salt, water and whisk it all well. Then add powdered sugar and mix it all again. Keep it aside.
4. Now heat oil for deep frying in a kadai.
5. Take the batter and gently drop it as small balls into the kadai.
6. Fry them until they are golden brown on all sides.
7. Remove them from the kadai and soak them up in normal water for 5 minutes.
8. Gently squeeze off the excess water from the vadas after 5 mins and drop them in the curd mixture.
9. Make sure the vadas are coated well with curd on all sides and then soak them for 2 hours at least.
10. After 2 hours, you can transfer the vadas along with some curd to a serving plate.
11. Garnish them with green chutney, tamarind chutney, red chilli powder, chaat masala powder, nylon sev, pomegranate arils and finely chopped coriander leaves.
12. That's it, street style Dahi Bhalla is ready to be served and enjoyed!

Dahi Bhalla is an amazing street food recipe which you find commonly in North India. It is also called Dahi Vada (different from the south Indian dahi vada) in some places. Since this is a chaat recipe, the curd used in the recipe is a bit sweet and the urad dal vadas are served along with a few more accompaniments.
