This  Crispy Brussel Sprouts recipe (actually spelled Brussels Sprouts) is exploding with flavor.  In addition to bacon, the Brussels Sprouts are oven roasted with pecans, then finished with blue cheese and balsamic vinegar!  An excellent side dish or make it one of your new favorite dinner recipes -  with very little prep work, these Brussels Sprouts pack a huge flavor punch.

Crispy Bacon Brussels Sprouts

1 pd Brussels Sprouts
1 tablespoon olive oil
1/2 cup pecan pieces
4oz uncooked, thick sliced bacon
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup blue cheese crumbles
2 teaspoons balsamic vinegar

Preheat oven to 425º

Trim and halve the Brussels sprouts.  If the Brussels sprouts are large, you may need to quarter them.  Spread out evenly in a single layer on a rimmed baking pan.

Sprinkle the pecan pieces over the Brussels Sprouts.

Slice the bacon into 1-inch pieces and add to the Brussels Sprouts.

Add salt and pepper.

Roast for 20-25 minutes or until the Brussel Sprouts and bacon are crispy.

Place the Brussels Sprouts in a glass bowl and toss with the blue cheese crumbles and balsamic vinegar.  

Enjoy!
