Hi, I'm Sergio, your host, and today I'm going to show you the right way to mince meat. Mincing is the process by which the aim is to obtain a paste which, if subjected to thermal treatments such as boiling or smoking, coagulates uniformly, giving birth to a solid product. Mincing is done through a meat grinder, through sieves of different sizes. Depending on the product recipe you are making, the chop may be smaller or larger.
