Chinese Spicy Lamb Rib Recipe
Chinese Spicy Lamb Rib Recipe (Asian Style Cooking Recipe)
Welcome to my Asian kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and learn new Chinese recipes.
Ingredients:
350g Lamb Ribs
1 Red Chilli
½ Tsp Sichuan Peppercorns
10g Ginger
4 Cloves Garlic
1 Star Anise
1 Tsp Fennel Seeds
20g Coriander
1 Tsp Sugar
1 Tbsp Sichuan Bean Sauce
1 Tbsp Dark Soy Sauce
Salt to Taste
Method:
1. Thinly slice the ginger, chilli
2. Finely chop garlic and coriander
3. Cut the lamb ribs into about 1½ inch chunks
4. Boil 1 litre of water in the pan, place lamb ribs into the pan and boil for 3 minutes, remove and drain
5. Heat 1 Tbsp of oil in the wok, Add ginger, garlic, chilli and bean sauce, stir fry for a minute
6. Add the lamb ribs into the pan and stir fry for a minute
7. Add 500ml of water, Sichuan peppercorn, star anise, fennel, salt, sugar and soy sauce
8. Bring to the boil and the turn heat to medium, cook for about 30 to 40 minutes till meat is tender
9. Turn heat to high to reduce juice to minimum, add coriander and stir to mix well
10. Transfer onto a dish and serve
