Hey guys! Watch me as I make Southern Fried Corn! This is the perfect side dish for any cookout or for your Sunday dinner. Fresh corn on the cob is highly recommended (if available) when making this dish. Fried corn was a popular dish my granddad would make when I was growing up. I hope you all enjoy this recipe!

Ingredients:

8-10 ears of fresh corn
1 stick of unsalted butter (reserve 2 tablespoons for the end)
2 tablespoons of olive oil
Garlic salt
Black pepper
Onion powder
Cajun seasoning
2 tablespoons of sugar
Parsley flakes (for garnish)
1/2 yellow onion (optional)
1/2 red bell pepper (optional)

Shuck the corn. Remove the husks and silk. Rinse your corn.

Get a large bowl. I used a large rectangular storage bowl. Cut the kernels from the cob.

Using the back of the knife, scrape the cob to to get the "milk" from the corn. This is important! The milk from the corn will help make the corn creamy and thicken your dish. This adds great flavor and texture. Don't skip this step!

You can use bacon grease and butter to fry the corn, but I'll only be using butter and olive oil. Bacon grease adds great flavor, and this is how it's traditionally cooked. I'm making this dish for vegetarians/vegans, so I didn't use bacon grease. Melt your butter and place the corn in a cast iron skillet. Cast iron works best! Season to your taste. Add onions and bell peppers (optional).

The corn will cook for about 30-35 minutes. Stir frequently to prevent corn from burning. When the corn is just about done, add the reserved 2 tablespoons of butter. Garnish with parsley flakes.
